| Tasting Note |
| This Valmoissine has an intense colour and developed aromas of candied fruit. In the mouth the fruit is supple, and with a few more months of ageing the spicy tanins will be perfectly rounded. On the back palate a balanced structure is revealed for this Pinot Noir planted high up on the Verdon hillsides at an altitude of 500m giving the wine finesse and delicateness. |
|
| Vinification |
| Traditional Burgundy techniques with 10-12 months in stainless steel vats. |
|
Description The Domaine de Valmoissine is located on the site of the ancient monastery and university of Valmoissine at 500 metres above sea-level which guarantees sunshine during the summer months whilst remaining cool and limits the possibility of spring frosts.
The grapes are entirely hand-picked before being fermented in stainless steel open-vats for a short period of 4-5 days. Pigeage will take place 2-3 times a day to extract colour and tannins. |
